It's simple as pie, but there is a twist:
First create a new thread. Here's an Easy Way to Create Threads tutorial.
Next, fill in the Thread Title (step 1 circled in read in the following snippet) and Message Body (step2).

Next, scroll down to the bottom of the message body and click on "I want to post a poll" and enter the number of polling question options you'd like (step 3 circled in red).
Here's the twist, MyBB forces you to now post your message to the board, but you haven't yet told it anything about your poll particulars! Weird! I know, but go ahead and click on the "Post Reply" button (step 4).
After you post your message the poll template will be launched asking you to post your question and the options for answers as shown in the following snippet:

First post your question and define the number of poll options that you have in mind (step 5), then fill in your poll options (step 6), and finally click on the "Post New Poll" button at the bottom of the template (step 7).
