When starting the generator it fires instantly but dies. If I hold the
starter on for a couple seconds after the generator has started it
will stay running. Is there a shutdown delay on these so the oil
pressare can build up? If so where would it be and what does it look
like?

Yes. There are two sensors on the forward side of the block. One is
the oil pressure sender switch and one is the low oil pressure cut off
switch. The low pressure switch is wired in tandem with the high
temperature shut off sensor at the top inboard side of the head.

Troy,
There's a heater on the engine that needs to warm up before
starting the engine. Hold the generator switch in the "off" position
for 30 seconds or so before starting. That provides power to the
heater and may be the reason the engine doesn't stay running.
Mine does the same thing if I don't pre-heat it.
In very cold weather, I hold it on for a minute.

The heater is a set of glow plugs. On mine, the glow plugs are series
plugs and not parallel plugs. This means that if one glow plug fails,
they all do. It's something to keep in mind if it starts hard or
won't run right away. I don't know if there is a retrofit kit to
change the glow plugs to parallel plugs. I changed to parallel from
series on my 77 Mercedes diesel and it made all the difference in the
world when it came to starting in cold weather.

Troy, If it runs while you are holding the start button down and then dies when
you let go, that usually means the generator is not generating electricity.
